Easy Moroccan-style meatballs

Serves: 4
2 tbsp vegetable oil
1 red onion, finely chopped
610g pack essential Waitrose New Zealand Lamb 24 Meatballs
2 tsp Bart Ras El Hanout seasoning
400g can essential Waitrose Chopped Tomatoes
400g can essential Waitrose Chickpeas, rinsed and drained
75g Waitrose Love Life Apricots, roughly chopped (optional)
250g essential Waitrose Couscous
1. Heat the oil in a large pan, add the onion and fry until it begins to soften. Add the meatballs and fry until sealed on all sides, then add the ras el hanout and fry for a further minute.
2. Stir in the tomatoes, 100ml cold water, chickpeas and apricots (if using), and mix together well. Cover the pan and simmer for 30 minutes, until the meatballs are cooked through.
3. Meanwhile, cook the couscous according to pack instructions. Serve with the meatballs.
