Prawn, fine green bean & ginger noodles

Serves: 4
2 tbsp sunflower oil
40g fresh root ginger, finely chopped or grated
2 cloves garlic, crushed
300g pack fine green beans, cut into thirds
150g raw prawns
115g washed spinach
2 tbsp dark soy sauce
1½ (one and a half) tsp clear honey
¼(quarter) tsp ground black pepper
1½ (one and a half) tbsp toasted sesame oil
2 x 275g packs cooked egg noodles
1. Heat the oil in a large frying pan or wok and add the ginger and garlic. Cook for a few seconds then add the beans. Stir-fry over a medium-high heat for 4-5 minutes, until the beans are almost tender. Add the prawns and cook for 1-2 minutes, then add the spinach and cook for a further 1-2 minutes, until the spinach has wilted and the prawns have turned pink.
2. In a small bowl, combine the soy, honey, pepper and sesame oil. Pour this into the pan and mix well. Add the cooked noodles, turn up the heat to high and stir-fry for 1 minute until piping hot and combined. Serve straight away.
