    Rachel Ama’s coconut rice

    • Cooking time: 10 minutes

    Serves: 2 as a side

    Ingredients

    200g basmati rice
    240ml coconut milk  

    Method

    1 Rinse the rice until the water runs clear. Put the rice into a large saucepan along with the coconut milk and 200ml water. Season with salt and stir. Bring to a gentle simmer over a medium heat, then cover, reduce the heat to low and cook for 10 minutes, or until all the liquid has been absorbed. Remove the lid and fluff the rice with a fork.
