Roast radishes with pecans and garlic butter

Serves: 4 as a side dish
450g mixed radishes, halved
1 tbsp olive oil
60g pecan nuts
35g unsalted butter
3 garlic cloves, crushed
½ x 25g pack flat leaf parsley, leaves roughly chopped
1. Preheat the oven to 240˚C, gas mark 9. Put the radishes and oil into a roasting tin, season and toss together. Roast for 10 minutes, then reduce the temperature to 200˚C, gas mark 6, and add the pecans. Roast for 4-6 minutes until the radishes are golden and the nuts are a shade darker and aromatic.
2. Meanwhile, put the butter and garlic in a pan over a medium heat until the butter melts and begins to foam (take care not to brown the garlic). Remove from the heat and season. Stir in the roasted radishes and pecans, then add the parsley. Serve as a side dish or toss with salad leaves, if liked, for a delicious salad.
