Serves: 16
75g dried blueberries (or raisins)
100ml orange juice
4 very ripe bananas
1 tsp vanilla extract
6 tbsp olive oil
200g muesli base
60g ground almonds
30g desiccated coconut
½ tsp sea salt flakes
40g 90% cacao dark chocolate, finely chopped
6 Brazil nuts, roughly chopped
20g walnuts, finely chopped
20g Nature’s Heart Omega 3 Superpowder
1. Heat the oven to 200ºC, gas mark 6. Grease and line the base and sides of a 23cm-square tin. Place the dried blueberries and orange juice in a bowl and leave to soak for at least 10 minutes.
2. In a food processor, blitz together the bananas, vanilla and oil until smooth. Mix all the remaining ingredients together in a large bowl, then add the blueberry and banana mixtures and stir together.
3. Pour into the tin and level the surface. Bake for 45 minutes until firm to the touch and golden. Cover with foil towards the end of cooking if the top is getting too brown.
4. Leave to cool for 10-15 minutes in tin, then lift out carefully and place on a cooling rack until completely cool. Using a sharp serrated knife, cut into 16 squares.
