Sherry vinaigrette

Enjoy this dressing tossed through a zingy salad of watercress, thinly sliced fennel and radishes, and slices of orange. It also works well drizzled over steak, pork chops or griddled squid.
Serves: 4
80ml extra virgin olive oil
2 tbsp sherry vinegar
1 crushed clove garlic
½ tsp clear honey
Chopped fresh herbs, to serve
1.Put all the ingredients in a small bowl and whisk until combined. Stir in some finely chopped fresh herbs of your choice.
Variations
Stir in ½ tsp dried red chilli flakes to give it a fiery kick, or swap the sherry for balsamic or red wine vinegar.
