Simple seafood chowder

Serves: 4
2 rashers essential Waitrose Smoked Back Bacon, chopped
2 leeks, trimmed and sliced
2 tbsp plain flour
600ml milk
195g can essential Waitrose Sweetcorn, drained
400g pack frozen essential Waitrose Cooked Seafood Selection, defrosted
Soda bread, to serve
1. Put the bacon into a wide non-stick pan. Fry from cold for 3 minutes until the fat runs. Add the leeks and cook for 3 minutes more until the leeks are soft.
2. Stir in the flour, cook for 1 minute, then gradually stir in the milk until smooth. Add the sweetcorn and seafood and slowly bring to a simmer for 10 minutes or until the soup is silky and the seafood is piping hot. Season and serve with soda bread.
