Warm pea, bean & lentil salad

Serves: 2
400g frozen essential Waitrose Pea And Bean Mix
250g pack Puy Lentils
200g cherry tomatoes, halved
Juice 1 small lemon
2 tsp honey
2 tbsp extra virgin olive oil
25g pack chives, chopped
1. Cook the beans and peas in boiling water for 5 minutes, then drain.
2. Meanwhile, heat the lentils according to the pack instructions and mix with the peas, beans and tomatoes.
3. Combine the lemon juice, honey and oil. Toss with the salad and chives, and serve.
