Zaatar, feta & sesame buns

Makes: 8 small nibbles
80g self-raising flour
40g butter, very cold then coarsely grated
50g yogurt or soured cream, plus extra to serve (optional)
25g Parmigiano Reggiano, grated
20g feta, crumbled (or goat’s cheese)
1 tsp zaatar, plus extra to serve
For the coating (optional)
2 tsp sesame seeds ½ tsp chilli flakes
1. Place all the ingredients for the buns in a bowl and mix to just combine into a dough, then transfer it to your worktop and roll into a sausage about 16cm long.
2. If you’re coating the buns, sprinkle the sesame seeds on the worktop and scatter the chilli flakes around, then roll the dough all over them, to coat. You can do this stage in advance. Keep the log in the fridge, covered, until you are ready to bake that day.
3. Preheat the oven to 200°C, gas mark 6. Cut the log into 8 even pieces (about 2cm each) and lay them flat on a baking tray (no need to line as they don’t tend to stick).
4. Bake for 12-14 minutes, until golden. Serve warm, topped with 1 tsp yogurt and a sprinkle of zaatar.
Honey & Co’s tip Cream cheese also makes a delicious topping in place of the yogurt.
