Stinking Bishop cocktail

Ingredients

2 lemons

200g caster sugar

300ml dark rum

100ml Cognac

500ml boiling water
Method

Finely pare the zest from the lemons, taking care not to get any of the bitter white pith. Cut the zest into fine matchsticks. Juice the lemons.

Put the lemon zest, sugar and rum into a large, flameproof serving bowl. Warm the cognac in a pan over a low heat, set it alight and pour it, burning, into the bowl of rum. Let it burn until it goes out (3-4 minutes). Then add the lemon juice and the boiling water. Stir well and serve in heatproof glasses.
