Though the Kashmiri chillies that go into Deggi Mirch are a staple Indian ingredient, they were introduced to the subcontinent relatively recently – around 400 years ago by Portuguese traders. Before that, heat was added using pepper or mustard seeds.

whaT does deggi mirch spice blend taste like?

The heat of Kashmiri chillies is tempered by the red bell peppers that are also used in the blend. The result is a rich, rounded spice that is prized more for its intense red colour than its heat.

  • Add a generous sprinkle to vegetable curries.
  • Thinking of using red food colouring in your chicken tikka masala? Think again!
  • Scatter over potatoes or a traybake of vegetables before roasting. 
  • Dust cubes of paneer with Deggi Mirch before frying.
  • Finish a makhani dal with a drizzle of deggi mirch fried in oil.
  • Rub over chicken before grilling.
  • Add to a mix of potato, fried onion, coriander leaf and lemon juice as a filling for samosas.

Chicken tikka

Add these gnarly spiced nuggets into a red curry sauce for chicken tikka masala, fold them into Greek yogurt for a deli-style bap filling, or serve as part of an Indian spread with breads, dips and samosas.

  1. Mix 4 tbsp Greek yogurt, the juice of 1 lemon juice, 1 tsp grated ginger, 1 tsp crushed garlic, ½ tbsp garam masala and 1 tbsp Deggi Mirch. Season, add chunks from 3 or 4 chicken breasts (or equivalent in thigh fillets) and marinate for at least 1 hour.
  2. Set your oven’s grill to high. Thread the chicken pieces onto skewers, place on a baking tray and grill, turning regularly, until cooked within (with no pink meat) and charred without – about 12 minutes.
