11 ways to use up Easter leftovers
From surplus roast lamb to a mishmash of cooked veg, we’ve often got leftovers in our fridge after Easter Sunday. Give them a second life with delicious creations such as our ultimate leftovers sandwich, roast dinner ragù and easy chocolate tiffin.
1. Make the ultimate leftovers sandwich
A leftovers sandwich to rival your Boxing Day doorstep. Lamb doused in date and tamarind sauce, stuffed into soft focaccia with herby labneh, baba ganoush and crispy fried onions.
2. Upgrade your bank holiday brunch
Bubble and squeak is a simple yet savvy way to upcycle that leftover veg taking up fridge space. The mint sauce drizzle brings a zingy pep to proceedings.
3. Dollop boozy chocolate cream on desserts
Too many chocolate bunnies hanging around? Magic them into this indulgent sauce, then pour it over (almost) everything. We love it on meringues. Leave out the alcohol if you prefer.
4. Create a hot cross brownie hybrid
Got a couple of hot cross buns lingering in the cupboard? Fold them into a deeply chocolatey brownie mixture - who could ask for a better Easter treat?
5. Layer up love
Tiffin is a fuss-free, yet satisfying, treat. Martha Collison's version is a colourful expression of Easter and a great way to use up any leftover chocolate.
6. Whip up Turkish-style flatbreads
This supper couldn’t be simpler: pile goodies from the fridge onto a ready-made pizza base, add herbs and spices, then cook until golden.
7. Roast potato parathas
Parathas are traditionally used for scooping up curries. Chetna Makan uses leftover roasties to fill up hers.
8. Throw together an odds-and-ends one-pot
Orzo makes a brilliant base for a scavenger supper, pairing well with veg, herbs and cheese that may already be in the fridge.
9. Hash it out
This Swedish-style hash is inspired by the traditional dish pytt I panna, which translates as ‘small pieces in a pan’. A poached egg on top is always a good addition.
