Preheat oven. Remove all packaging. Rub the rind dry with kitchen towel then add oil and salt, working into the scores. Place in a roasting tray in the centre of oven for 65 minutes to crackle the rind. Then reduce the heat to 180°C, Fan 160°C, Gas Mark 4 for a further 20 minutes per 500g. Remove crackling, cover the joint with foil and rest for 30 minutes before carving. Do not reheat once cooled. (Time 65 mins+20 mins per 500g, Oven: 240°C, Fan: 220°C, Gas: Gas Mark 9)
