The season starts in southern Spain in late June, but we prefer to wait for the varieties grown in Calanda to reach their peak. This small town in Aragon is DOP certified and celebrated for its exceptional peaches. Amarillo Percoca peaches are particularly suited to poaching, due to the high concentration of natural sugars in their flesh.
