Semi-soft cheese made with pasteurised cow's milk in England.
Smooth and supple, with deeply savoury, brothy notes. Our No. 1 Highmoor is made by the small Nettlebed creamery in Oxfordshire with milk from their own cows. Influenced by French styles of cheesemaking, they ladle the curds by hand and wash the rind during maturation, so it becomes ruby red with savoury, meaty flavours and a supple, giving texture under the brine-washed rind. Made with pasteurised cow's milk. Strength 3.
