Remove all packaging and place the joint onto a roasting tray. Rub the rind dry with kitchen roll and add oil and salt, working into the cuts. Then preheat the oven. …Once the oven is pre-heated put on the middle shelf of the oven. Cook for 30 minutes. Reduce the temperature to 180°C/Fan 160°C/Gas 4 for the remaining cooking time. If the crackling is still a bit soft, turn the temperature back up to 220°C/Fan 200°C/Gas 7 for the last 15 minutes. Rest for 20 minutes before carving. Do not reheat once cooled. (Time 30 mins per 500g + 30 mins, Oven: 220°C, Fan: 200°C, Gas: Gas Mark 7)
