MEAL MATHS – HALLOUMI AND PESTO SKEWERS

Takes 10 minutes | Serves 4

SCROLL DOWN TO ADD INGREDIENTS

1. Cut the halloumi into 12 chunks. 

2. Thread onto 4 metal skewers, alternating with the Mediterranean vegetables.

3. Brush each one with 1 tsp of pesto.

4. Cook on a hot preheated barbecue, griddle or grill for 10-12 minutes, turning occasionally, until starting to colour at the edges. 

5. Warm the flatbreads, then spread or swirl the remaining pesto on top.

6. Top with the skewers to serve. Delicious eaten rolled up or folded in half.
