MEAL MATHS – MACKEREL SPINACH AND EGG HASH

Takes 20 minutes | Serves 2

1. Warm a large non-stick frying pan over a high heat. Add the rosti and stir gently to break up. Fry, stirring just a couple of times, for 5 minutes or until tender and just starting to colour in places.

2. Break the fish into large pieces, discarding the skin and any bones, and add to the pan. Mix in the spinach and leave for 1-2 minutes until wilted.

3. Make 2 gaps then crack the eggs into them, cover with a lid and cook for 2 minutes or until the whites are just set and the yolks still runny. Serve immediately.
