Heat the oven to 180ºC, gas mark 4, and line a 12-hole muffin tin with paper cases. To make the cupcakes, beat the butter and sugar together with an electric mixer until very light and fluffy. Add the eggs, one at a time, and beat until well mixed. Once the eggs are incorporated, add the flour, baking powder, xantham gum, vanilla extract, poppy seeds, lemon juice and half the lemon zest. Fold with a spatula until well combined.
