Summer P&T recipe

Make a sugar syrup by bringing 250ml water and 100g caster sugar to the boil and stir. Add a handful of mint leaves as the sugar dissolves. Leave to cool. Put 50ml white port and 15ml mint sugar syrup in a shaker full of ice. Shake well. Pour into a wine glass full of ice. Top up with tonic water and garnish with lime slices
