To avoid the flesh from discolouring, prepare avocados just before you serve them.
Step 1
Using a sharp knife, cut the avocado in half lengthways, carefully cutting around the fruit's large central stone.
Step 2
Twist the halves in opposite directions, until they come apart.
Step 3
Use a teaspoon to remove the stone.
Step 4
Carefully peel the skin away from the flesh with your fingers or with the tip of a knife.
