Spicy baked bean jacket potatoes

Cold days call for cosy baked potatoes with spicy homemade baked beans and melty cheese. Start them off in the microwave to speed up the cooking.

Ingredients

  • 4 extra large potatoes
  • 1 tbsp vegetable or olive oil, plus a drizzle
  • 1 red onion, finely chopped
  • 1 tsp cumin seeds
  • 2 x 400g cans haricot beans, drained and rinsed
  • 400g can finely chopped tomatoes
  • 1 tbsp Cooks’ Ingredients Smoky 3 Chilli Paste
  • 100g Essential Mature British Cheddar, grated
  • 2 salad onions, thinly sliced
  • 2 tbsp sliced pickled jalapeños (optional)

Method

  1. Preheat the oven to 200ºC, gas mark 6. Prick the skins of the potatoes. Rub lightly with a drizzle of oil and season with salt, if liked. Microwave 2 at a time on full power for 10 minutes until tender, then put directly onto the oven rack and bake for 30 minutes until crisping (see tip below for other methods).

  2. Meanwhile, heat the 1 tbsp oil in a saucepan and cook the onion for 5-10 minutes, until softened and golden.

  3. Stir in the cumin seeds, then add the beans, tomatoes and ½ can water. Stir in the chilli paste, bring to a simmer and cook gently for 15-20 minutes. Season to taste.

  4. Split open the jacket potatoes and fill with the bean mixture. Sprinkle with the cheese, salad onions and the jalapeños, if using.

Cook’s tip

Haricot beans are a good source of fibre, protein, potassium, iron and manganes. If you prefer fully oven-baked potatoes, give them 1 hour in the oven instead.
