Noodle broth

This simple soup is a great way to use up leftover veg the day before you go to the shop. Whichever veg you use, aim for a rainbow of colours and a breadth of textures. The volume of this broth should be enough for 2 people.

  1. Add vegetable oil and a little Cooks' Ingredients Chilli Infused Olive Oil to a wok on a medium high heat. Toss in some julienned carrot and ginger, sliced red pepper and red onion, and chopped salad onion (white parts). Stir-fry until the veg is beginning to soften.

  2. Add shredded savoy cabbage and cook till beginning to wilt, then add a jar of Ramen Paste to 500ml boiling water. Return to the boil, add some noodles and cook till they are done. Divide the broth between bowls, topping each with halved boiled eggs and strips of salad onion greens.
