This is a play on an espresso martini with a more refreshing fruity tang from the sherry and vermouth. The egg white gives it a luxurious mouthfeel and pleasing foam on the top, but it still tastes great even if you leave that out

Ingredients

  • ice cubes
  • 35ml Mr Black Cold Brew Coffee Liqueur
  • 20ml Pedro Ximénez sherry
  • 20ml vodka
  • 25ml Cocchi Vermouth
  • 15ml egg white (see tip)
  • Whole coffee beans, to garnish
  • No.1 Croquants de Cordes biscuit, to serve (optional)

Method

  1. Fill a martini or stemmed sour glass with ice and cold water, then leave to chill. Add the cocktail ingredients to a shaker, then put the lid on and dry shake, without ice, for 30-40 seconds. Remove the lid, add a handful of ice cubes, then return the lid and shake for 30-40 seconds more, until the outside of the shaker is almost too cold to touch.

  2. Discard the iced water from the glass and shake out the remnants, then strain the cocktail into it. Garnish with coffee beans and serve with a biscuit for dipping, if liked.

Cook’s tip

If you’d rather not use raw egg white, buy egg whites in a carton. They’re pasteurised and easier to measure for cocktails.
