Apple, cider & oat crisp

A smart twist on apple crumble. The cider gives a grown-up tang, while pecans and oats add extra crunch. Ingredients

  • 500ml cider
  • 4 Waitrose Pink Lady Apples
  • 1 tsp clear honey
  • 50g light brown soft sugar
  • 50g plain flour
  • 50g plain flour
  • 50g jumbo oats
  • 30g pecans, roughly chopped
  • 50g unsalted butter, cubed and chilled
  • Cème fraîche or ice cream, to serve (optional)

Method

  1. Put the cider in a large saucepan and bring to the boil. Simmer briskly until evaporated by half (about 15 minutes). Meanwhile, cut the apples into 2-3cm chunks, discarding the cores.

  2. Add the apples and honey to the cider and continue to simmer until the apples are soft and the cider reduced to a syrupy sauce (about 10 minutes). Tip into a small, ovenproof dish (about 1 litre).

  3. Preheat the oven to 200ºC, gas mark 6. Put the sugar, flour, oats and pecans in a mixing bowl with a pinch of salt. Add the butter and rub together with your fingertips until you have a clumpy mix, then sprinkle over the fruit, piling it slightly higher in the middle. Bake for 25-30 minutes until the topping is golden. Stand for 5 minutes before serving with crème fraîche or vanilla ice cream, if liked.

Simple swaps

Use any other nuts you might have in the cupboard in place of the pecans; hazelnuts or walnuts are particularly delicious. Or leave them out altogether for a nut-free option.
