Boozy chocolate cream

Too many chocolate bunnies hanging around? Magic them into this indulgent sauce, then pour it over (almost) everything. Leave out the alcohol if you prefer.

Ingredients

  • 250ml double cream
  • 150g dark or milk chocolate (or a mixture of both), chopped
  • 25g unsalted butter, cubed
  • 1 tbsp caster sugar
  • 1 tbsp Cointreau, amaretto, rum or brandy (optional)
  • ½ orange (scrubbed), zest (optional)

Method

  1. Take the cream out of the fridge to come to room temperature. Put the chocolate and butter in a heatproof bowl set over a pan of barely simmering water. Once melted and glossy, take off the heat and cool for a couple of minutes. Stir in the sugar, then gradually stir in the cream, followed by the alcohol and/or orange zest (if using), plus a pinch of salt, until smooth. Serve warm or keep in the fridge for up to 5 days.

Cook’s tip

Top meringues with the sauce, whipped cream, toasted chopped hazelnuts and orange zest.
