Ingredients

  • 200g soba noodles
  • 2 tsp toasted sesame oil
  • 300g pack Superbright Stir Fry
  • 2 tsp sweet chilli sauce
  • 1 tsp soy sauce
  • 1 lime, zest and juice
  • 170g Poached Lemon & Herb Salmon Fillets

Method

  1. Bring a pan of salted water to the boil and cook the soba noodles according to pack instructions; drain and run under cold water until cool. Meanwhile, in a frying pan, heat 1 tsp toasted sesame oil over a high heat, then stir fry the Superbright Stir Fry according to pack instructions.

  2. In a large bowl, mix 1 tsp sweet chilli sauce, 1 tsp soy sauce, the zest and juice of lime, 1 tsp toasted sesame oil and 1 tbsp water. Flake the poached salmon fillet into chunks, then add to the sauce with the noodles and veg. Toss together to combine, then season and divide between 2 airtight containers.
