Chilli tomatoes & beans

A simple and speedy supper for two. Stir in your pasta of choice and serve with a green salad for a more substantial meal or simply with plenty of crusty bread to mop up the garlicky, oily juices.

Ingredients

  • 250g cherry tomatoes
  • 400g can cannellini beans, drained and rinsed
  • 4 sprig/s thyme, leaves picked
  • 3 clove/s garlic, thinly sliced
  • 50g pitted black olives
  • 1 tsp Ottolenghi Aleppo & Other Chillis
  • ½ tsp Ottolenghi Sweet & Smokey
  • 1 tbsp sherry vinegar
  • 120ml olive oil
  • ¾ tsp sea salt flakes
  • 25g pack basil, leaves picked and roughly torn, to serve

Method

  1. Preheat the oven to 200ºC, gas mark 6. Put ½ of the tomatoes in a medium, shallow ovenproof dish, approximately 26cm in diameter. Halve the remaining tomatoes and add to the dish, along with the rest of the ingredients (apart from the basil) and a good grinding of black pepper. Mix to combine and roast for 30 minutes. Stir in the basil and serve.
