Ingredients

  • ½ cucumber, finely diced
  • 450g pack classic vine tomatoes, finely diced
  • 1 green or red pepper, finely diced
  • 1 small red onion, finely chopped
  • 4 tbsp Kalamata olives with garlic & chilli, roughly chopped
  • ½ x 25g pack mint or coriander, leaves chopped
  • 1 little gem lettuce
  • 200g pack Greek Feta, to serve
  • ½ x 230g pack Doritos Dippers, to serve

For the dressing

  • 2 tsp Cooks’ Ingredients Harissa Paste With Lemon
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar

Method

  1. Place the cucumber, tomatoes, pepper, red onion, olives and herbs in a large bowl and toss together. Top with the lettuce, then cover and chill until ready to serve.

  2. To make the dressing, whisk together the harissa paste, oil and vinegar, or shake together in a small jar.

  3. When ready to serve, finely crumble the feta over the chopped salad, then pour over the dressing and gently toss together. Use the dippers to scoop up the salad to serve.
