Ingredients

  • 2 rib-eye or sirloin steaks (2cm thick)
  • ½ tbsp Essential Olive Oil

For the coffee marinade

  • 1 tbsp soy sauce
  • 100ml espresso, cooled
  • 1 tbsp red wine vinegar
  • 1 clove/s garlic, crushed
  • 1 tbsp Dijon mustard
  • 2 tbsp light soft brown sugar

Method

  1. Mix the marinade ingredients in a large resealable freezer bag. Add the steaks; leave to marinate in the fridge for at least 1 hour.

  2. When you’re ready to cook the steaks, put a large frying pan over a medium-high heat. Remove the steaks from the marinade and pat dry well on kitchen paper. Brush lightly with oil, season well and fry for 2-3 minutes on each side for medium-rare (or until cooked to your liking). Rest for 5 minutes under a loose sheet of foil, before slicing to serve.
