Ingredients

  • 4 tbsp mayonnaise
  • 3 salad onions finely chopped
  • 2 tsp nonpareille capers, drained and finely chopped
  • 1 Unwaxed Lemon, zest and juice
  • 1 tbsp finely chopped dill fronds, plus extra fronds to garnish
  • 2 x 100g Seafood & Eat It Handpicked White Crab
  • ½ ripe avocado, very finely chopped
  • 24 Rahms Mini Croustades

Method

  1. In a large bowl, combine the mayonnaise, salad onions, capers, ½ of the lemon zest, ½ of the lemon juice and ½ tbsp chopped dill (reserving the remainder). Stir in the white crab and season; set aside. In a second large bowl, combine the avocado, remaining lemon juice and the remaining chopped dill; season.

  2. Arrange the croustades on a platter. Fill with the crab mixture, then top with the avocado. Scatter with the remaining zest and the dill fronds. Serve at once.
