Preheat the oven to 220ºC, gas mark 7. Turn the root vegetable parmentier into a medium roasting tin. Roast for 10 minutes.
Meanwhile, trim the broccoli and cut any thicker spears in half lengthways. Put the broccoli into a bowl, and cover with freshly boiled water.
Season the chicken fillets and toss with 2 tsp dressing. Scatter the chicken over the vegetables (shake the tray first) and roast for 10 minutes more.
Drain the broccoli and toss with 2 tsp dressing. Stir into the tray and return to the oven for a final 8-10 minutes, or until the broccoli is tender and the chicken is cooked through, there is no pink meat and the juices run clear. Generously drizzle with extra dressing, then divide between plates and serve.
