Heat 1 tbsp oil in a large frying pan. Add the frankfurters and fry for 3 minutes on each side until golden; set aside and keep warm. Add the remaining ½ tbsp oil to the pan, with the onion and a pinch of salt and fry for 4-5 minutes until softening, then stir in the garlic and paprika; fry for another 2 minutes.
Tip the tomatoes, stock and beans into the pan. Add the thyme (if using) and sugar; simmer for 15-17 minutes, stirring occasionally, until the beans are coated in a thick sauce.
Slice the frankfurters diagonally and add to the pan for a final 2-3 minutes. Serve with crusty bread or baked sweet potatoes, if liked.
Up your veg count. Get closer to your 5 a day by adding a chopped celery stick and a grated carrot with the onion – or omit the onion and use a pack of ready-chopped soffritto.
