Ingredients

  • 1 small red onion, finely sliced
  • 250g cherry vine tomatoes
  • 40g pitted Kalamata olives
  • 165g extra large raw king prawns
  • 2 tbsp Waitrose Garlic Infused Olive Oil
  • 75g feta
  • ¼ x 25g pack flat leaf parsley, roughly chopped
  • 4 flatbreads, barbecued, to serve (optional)
  • green salad, to serve (optional)

Method

  1. Prepare and light the barbecue. Meanwhile, tear off 2 large sheets of foil. In a large bowl, put the red onion, cherry vine tomatoes, Kalamata olives and prawns. Toss with the garlic olive oil; season. Divide between the sheets of foil, piling into the centre of each. Fold over the edges of the foil to seal into loose parcels. Put on the barbecue for 10-15 minutes or until the prawns are fully cooked, opaque and pink throughout. Open the parcels, crumble over the feta and scatter with the parsley. Serve with barbecued flatbreads and a green salad, if liked.
