Ingredients
- 2 x 250g blocks halloumi
- 4 tbsp clear honey
- 2 tbsp rose harissa
- 2 tbsp olive oil
Method
Cut each halloumi block into bitesized chunks (2-3cm). In a small bowl, mix together the honey and harissa. Heat a large frying pan over a high heat, drizzle in the oil, then add the halloumi and fry until golden brown on all sides, turning frequently (5-6 minutes).
Pour the honey mixture over the halloumi, then immediately stir to coat to avoid burning. Bubble away, stirring constantly, for a couple of minutes, then remove from the heat and serve straight away. Cocktail sticks are especially useful, but you can make larger quantities and just serve with a spoon.
Cook’s tip
Get ahead: Cut the halloumi into chunks and mix together the honey and harissa a few hours ahead. Then fry up the halloumi just before the guests arrive.
