Heart-shaped breakfast oat bar
Not only a treat for breakfast in bed with your coffee or tea, this is also an excellent snack for a busy partner who has to work on Valentine’s Day. Honey & Co's recipe is sweet yet a little sharp, and a sustaining and delicious way to remind someone you love them.

Ingredients
For the dry mix
- A little oil, for greasing
- 125g porridge oats
- 30g almonds, flaked or roughly chopped
- 20g desiccated coconut
- 40g dried mango, diced into cubes
- ¼ tsp ground ginger
- ¼ tsp sea salt flakes
For the binding
- 50g maple syrup (or use honey if you prefer the flavour)
- 50g coconut oil
- 50g golden caster sugar
For decoration (optional)
- 25g Cooks’ Ingredients Belgian White Chocolate, chopped
Method
Preheat the oven to 190ºC, gas mark 5. Grease and line a 20cm round sandwich tin with baking parchment. If you like, make a heart-shape space in the tin using kitchen foil (see tip). Mix all the dry ingredients together in a bowl. Place all the binding ingredients in a small pan and bring to a boil.
Add the dry mix to the small pan and mix well to combine. Transfer to the lined tin, press the mixture down with the back of a spoon to compress, then bake for 25 minutes until golden.
Cool for a few minutes, then pop it out from the tin and foil heart shape, if used, so it doesn’t stick. Cool completely.
To decorate, melt the chocolate in a heatproof bowl, in short bursts in the microwave, or over a pan of barely simmering water. Stir until smooth, then pipe or drizzle your message on top and leave to set.
Cook’s tip
You can easily shape this into a heart using a little kitchen foil to form the top triangle and a little on the sides to form the lines or bake in a 20cm heart-shaped cutter or cake tin.
