Honey butter pretzels

This is an adaptation of a classic Korean treat. In the restaurant, we fry our own potato crisps to make it, but pretzels work brilliantly at home. This dessert hits all the right sweet, salty and umami notes – plus it’s on the table in just 10 minutes.

Ingredients

  • 75g salted butter
  • 50g clear honey
  • 1 tbsp soft light brown sugar
  • ½ tsp soy sauce
  • 450g tub vanilla ice cream, to serve
  • 50g salted pretzels
  • 1 pinch hot smoked paprika

Method

  1. Tip the butter, honey, sugar and soy sauce into a small pan and set over a low heat. Using a balloon whisk, gradually mix everything together to create a hot, glossy, caramel-like sauce (about 5 minutes). Try not to let it boil.

  2. To serve, take 4 bowls and put a couple of scoops of vanilla ice cream into each, then top with the salted pretzels, crushing them coarsely with your fi ngers as you go. Pour a generous amount of warm honey butter sauce over the pretzels and top with the hot smoked paprika.
