Leek crumpet rarebits

A ready-made rarebit sauce and sweet, soft leeks make a first-class topping for star-shaped crumpets. These are just as good after a bracing walk as they are for brunch.

Ingredients

  • tbsp olive oil
  • 2 leeks, halved lengthways and finely sliced
  • 6 Golden Star Crumpets
  • 180g Red Fox Welsh Rarebit Bake
  • 1 tbsp finely chopped chives
  • 2 tsp Worcestershire sauce (optional)

Method

  1. In a large frying pan, heat the oil over a medium heat. Fry the leeks with a pinch of salt for 8-10 minutes until softened and turning golden. Meanwhile, heat the grill to high and line a baking tray with foil. Arrange the crumpets on the tray and grill for 2-3 minutes until lightly toasted.

  2. In a pan, empty the tub of rarebit and set it over a low heat until warmed through and loosened in texture (2-3 minutes). Tip into a bowl and stir through the cooked leeks.

  3. Divide the rarebit mixture between the 6 crumpets, then return to the grill and cook for 3-4 minutes until turning golden. Divide between 6 plates and scatter over the chives and a little freshly ground black pepper. Serve with a splash of Worcestershire sauce, if liked.
