Lime, basil & ginger frozen margaritas

Ingredients

  • Crushed ice
  • ½ x 25g pack basil leaves, plus extra to garnish
  • 50 ginger, peeled and cut into rough chunks
  • 6 unwaxed limes, zest and juice (about 100ml), plus extra wedges for garnish (optional)
  • 5 tbsp caster sugar
  • 180ml tequila
  • Fine sea salt, to serve (optional)

Method

  1. Fill a blender jug ¾ full with crushed ice. Add the basil, ginger, lime zest and juice, sugar and tequila, then whizz until smooth. If liked, rub the top of 6 tumblers with a wedge of lime and dip into a plate of fine sea salt to create a salt rim. Divide the cocktail mixture among the 6 tumblers, top with a basil leaf and serve immediately.

Get ahead: Prepare all the elements in advance, then whizz up the margaritas just before your guests arrive.
