This quick and easy salmon dish is packed with flavour, and perfect for a mid-week dinner. It works great with a fresh green salad, potatoes, or rice.

Ingredients

  • 280g pack 2 Scottish salmon fillets
  • 50g rolled oats
  • 4 salad onions, thinly sliced
  • 1 Zest of lemon
  • 2 tbsp low-fat natural yogurt
  • ½ x 25g pack parsley, chopped
  • Fresh leaf salad, to serve

Method

  1. Preheat the oven to 200°C, gas mark 6. Place the salmon in a small greased baking tin.

  2. Mix together the oats, salad onions, lemon zest, yogurt and parsley, season well and press onto the salmon. Bake for 15 minutes or until just cooked then serve with salad.
