Ingredients
- 4 tbsp sunflower oil
- 1 tsp cumin seeds
- 2 onions, thinly sliced
- 2 tomatoes, thinly sliced
- 4 clove/s cloves garlic, finely chopped
- 1 tsp salt
- 1 tsp garam masala
- 1 tsp ground cumin
- 1 tsp Cooks’ Ingredients Chaat Masala
- 2 peppers (1 red and 1 green looks good), deseeded and thinly sliced
- 2 tbsp tomato ketchup
- 1 tsp Cooks’ Ingredients Chilli & Garlic Sauce
- 226g pack paneer, cut into thin fingers
- ¼ x 25g pack coriander leaves, roughly chopped
Method
Heat the sunflower oil in a large frying pan, then add the cumin seeds. Once they start to sizzle, add the onions and stir fry over a medium heat for 6-8 minutes until softened.
Add the tomatoes to the pan and stir fry for 6-8 minutes until softened. Add the garlic, salt and spices, cook for 1 minute more, then add the peppers and 2 tbsp water and cook for another 5 minutes until they start to soften.
Add the ketchup and chilli and garlic sauce into the vegetables and mix well, then add the paneer and mix again. Cook for 2 minutes until the paneer is hot through, then sprinkle over some coriander and serve.
