Passion fruit coronation cocktail

Inspiration for this drink comes from a classic French 75, usually made with lemon, gin and Champagne. A royally delicious cocktail to enjoy for The Coronation.

Ingredients

  • 200ml Buckingham Palace Gin
  • 3 tbsp No.1 Passion Fruit Curd
  • 75ml bottle Champagne, chilled
  • 24 raspberries
  • 1 passion fruit (optional)

Method

  1. In a jug, stir together the gin with the passion fruit curd. Cover and set aside in the fridge if preparing in advance.

  2. When ready to serve, divide the gin mix between 8 cocktail glasses, such as a coupe, then top up with Champagne.

  3. Place 2-3 raspberries into each glass, then add a little passion fruit, if using, and serve.

Cook’s tip

For an alcohol-free version of this cocktail, replace the gin with Sipsmith FreeGlider, and the Champagne with Belvoir Elderflower Pressé.
