Pasta with tuna & butter beans

Ingredients

  • 150g penne pasta
  • 200g Essential Tuna Chunks In Olive Oil
  • 2 tbsp Cooks’ Ingredients Nonpareille Capers, drained and rinsed
  • 1 tsp Cooks’ Ingredients Italian Seasoning
  • 370g jar Belazu Judion Butter Beans
  • 1 tsp white or red wine vinegar
  • ¼ x 25g pack flat leaf parsley, leaves chopped (optional)

Method

  1. Cook the pasta according to pack instructions. Meanwhile, tip the oil from the tuna can into a large frying pan. Dry the capers on a sheet of kitchen paper and add to the pan. Cook for 2 minutes until sizzling, then stir in the Italian seasoning.

  2. Add the beans, including their water, and cook gently for 3-4 minutes, breaking some of the beans down a little, until heated through.

  3. Stir in the tuna and warm through gently. Add the vinegar, check the seasoning, then remove from the heat.

  4. Drain the pasta, reserve a cup of cooking water, then return to the pan. Add the tuna and beans and gently mix together. Add a splash of reserved water to loosen if needed. Divide between 2 bowls and finish with a good grind of black pepper and the parsley, if using.

Cook’s tip

This store-cupboard supper can be made using any chunky pasta shape and is a great way to use up the odds and ends of packets.

You could easily adapt this recipe to use a couple of cans of sardine piccante or sardine al limone instead.
