Pineapple & Thai basil mojito

Sweet pineapple brings a tropical vibe to the classic cocktail. You can use traditional mint, of course, but Thai basil adds an interesting anise note.

Ingredients

  • 250g very ripe Supersweet Medium Pineapple, peeled
  • 4 tbsp caster sugar
  • ½ x 20g pack Thai basil, leaves picked, plus extra sprigs to serve
  • 4 limes, juice
  • 200ml white rum
  • crushed ice
  • 200ml soda water

Method

  1. Cut the pineapple into 2cm chunks, removing the tough inner core as you go. Put into a large jug and use a rolling pin to muddle with the sugar and Thai basil leaves. Add the lime juice and mix.

  2. Divide between 4 tall glasses and add 50ml rum to each. Fill with crushed ice, then top up with the soda water. Decorate with a sprig or two of Thai basil.
