Put rhubarb, caster sugar, water and the lemon juice in a pan. Cook over a medium heat for 10 minutes, until the fruit is very soft. Cool, then strain (discard the pulp).
Pour the cordial into a flute with the gin or rhubarb gin. Top with chilled sparkling wine; garnish with a pared strip of rhubarb. Leftover cordial will keep for 3 days in the fridge.
