Rhubarb royale cocktail

A pretty pink twist on a kir royale, using homemade rhubarb cordial. The cordial is also delicious with soda water.

Ingredients

  • 150g chopped rhubarb
  • 100g caster sugar
  • 100ml water
  • ½ juice of ½ lemon
  • ½ tbsp gin or rhubarb gin
  • top with chilled sparkling wine

Method

  1. Put rhubarb, caster sugar, water and the lemon juice in a pan. Cook over a medium heat for 10 minutes, until the fruit is very soft. Cool, then strain (discard the pulp).

  2. Pour the cordial into a flute with the gin or rhubarb gin. Top with chilled sparkling wine; garnish with a pared strip of rhubarb. Leftover cordial will keep for 3 days in the fridge.
