Ingredients

  • 5 tbsp creme fraiche
  • 1 tbsp soft cheese
  • 1 tbsp wholegrain mustard
  • 1 lemon, juice of 1/4 and wedges
  • chives, finely chopped
  • 100g Waitrose Scottish Smoked Salmon
  • 12 ready-to-eat quail eggs
  • 24 pack Peter’s Yard Sourdough Seeded Wholegrain Crackers

Method

  1. In a small bowl, stir together the crème fraîche, soft cheese, wholegrain mustard, the lemon juice and chives.

  2. Take the smoked salmon and separate the slices; cut each into 6 strips. Halve the quails eggs.

  3. Take the crackers and spoon 1 tsp of the crème fraîche mixture onto each. Add a curl of smoked salmon and sit a halved quail’s egg on top. Sprinkle with some finely chopped chives and freshly ground black pepper, if liked. Serve immediately with lemon wedges for squeezing over.
