Salmon & watercress spaghetti

Ingredients

  • 180g dried spaghetti
  • 230g pack purple sprouting broccoli spears, cut into 3-4cm pieces
  • 170g pack Waitrose 2 Scottish Poached Salmon Fillets
  • 170g tub No.1 Watercress Tzatziki
  • ½ unwaxed lemon, zest of all, squeeze of juice
  • 10g Parmigiano Reggiano, finely grated, plus extra to serve

Method

  1. Bring a large saucepan of salted water to the boil. Add the spaghetti and simmer for a minute less than pack instructions, adding the broccoli to the pan for the final 3 minutes of cooking time. Before draining, scoop out a mugful of the cooking water. Meanwhile, flake the salmon and remove the skin.

  2. Tip the drained pasta back into the pan (off the heat). Add the flaked salmon, tzatziki, lemon zest and juice, plus the cheese, along with 3 tbsp pasta cooking water. Toss together with tongs to combine and serve with extra grated cheese.

Boost your fibre intake by using wholewheat spaghetti. You could also add some frozen peas with the broccoli.
