Ingredients

  • 1 clove/s garlic
  • 2 anchovy fillets
  • 25g Cooks’ Ingredients Flat Leaf Parsley, leaves roughly chopped
  • 25g Cooks’ Ingredients Basil, leaves roughly chopped
  • 1 tsp nonpareille capers, drained and rinsed
  • ½ lemon, juice
  • 60ml extra virgin olive oil

Method

  1. Put the garlic, anchovies and a small pinch of salt in a mortar; use a pestle to pound to a paste. Add the herbs and capers and pound again until you have a coarse mixture. Stir in the lemon juice and olive oil; season and set aside. You could also pulse the ingredients together in a mini food processor.
