Scotch bonnet & peach vodka soda

This fruity tipple from Michelin- starred west African restaurant Akoko has a kick from homemade Scotch bonnet cordial. Garnish with a chilli if you’re feeling brave!

Ingredients

Scotch bonnet cordial

  • 20g cotch bonnet chillies
  • 200g sugar
  • 200ml lemon juice

Cocktail

  • 50ml vodka
  • Peach soda, to serve
  • Lemon slice, to serve (optional)
  • 1 chilli, to serve (optional)

Method

  1. First make the Scotch bonnet cordial: quarter the Scotch bonnet chillies (leave the seeds in for more of a kick) and add to a pan with the sugar, 200ml water and the lemon juice. Simmer until the sugar has dissolved, then strain through a sieve into a sterilised, sealable container and leave to cool before chilling – the cordial will keep in the fridge for up to 2 weeks.

  2. To make the cocktail, pour the vodka and 20ml of the pre-prepared cordial into a highball glass filled with ice, then top up with peach soda (try London Essence). Garnish with a lemon slice and a chilli if liked.
