Ingredients
- 2 tbsp olive oil
- 1 garlic clove, finely chopped
- 400g chopped tomatoes
- 6 basil leaves, torn, plus more to serve
- 1 tsp caster or granulated sugar (optional)
Method
Heat the oil in a medium saucepan over medium heat. Add the garlic and fry for 1 minute, until softened and smelling aromatic, but not coloured.
Add the tomatoes and basil, season, then simmer for 10-15 minutes, stirring occasionally, until thick and glossy. Check the seasoning again and add the sugar, if needed. Tear in some more basil leaves to serve.
Cook’s tip
This sauce makes about 200ml, enough to top 4 homemade pizzas or for dressing cooked gnocchi or pasta to serve 4. You can make the sauce in advance and store it in a clean, covered container in the fridge for up to 2 days. It can also be frozen for up to 1 month.
Tomato sauce can sometimes be a little acidic, depending on the tomatoes used. Adding a little sugar at the end of cooking can balance the flavour.
